A shorter than usual update: I gotta get to a wedding
With apologies to this classic McSweeney’s post, it is chicken soup season, indeed, motherforkers. Here’s a few great ones to expand your existing repertoire. They all freeze and scale up well. Just a reminder that, no matter what kind of soup you’re making, even if you use a lot of prepped/convenience ingredients, it’s going to be better than canned. WAAAAAAAY better. ALWAYS.

Pho Ga (chicken pho) requires a lot less hullabaloo than classic pho dac biet but still carries much of the satisfying, aromatic brightness.
This recipe for dakdoritang (spicy Korean chicken stew) is so good, I once made it on camera with folks from WBEZ.
The always satisfying, creamy and comforting corn and chicken chowder is, in my opinion, superior to crab-based versions, if only because you probably have almost everything to make it already in your pantry and fridge. The ROI on this is ridiculous. Don’t forget some crusty bread (or make a pan of corn bread) for dipping.
I’ve no idea if this Tuscan chicken soup is authentic, but it looks tasty and healthy AF.
Bust out the slow cooker for this classic chicken chili. Use chicken thighs.
This recipe for Mulligatawny soup only features chicken broth, but it looks like you could poach some regular chicken thighs in all that vegetal goodness and bulk it out for some additional protein. Extra points if you brown the thighs beforehand.
This Nigerian chicken stew is leaning more towards chicken-parts-in-flavorful-sauce territory, but it looks like it would defrost your heart and insides effectively.
